Objectives were to (1) determine market share estimates of identical fresh and frozen meat cuts in a controlled market test in response to a series of price differentials; (2) determine, from a consumer panel, the specific nature of consumer purchase behaviour in relation to purchase and repurchase decisions for frozen meat; (3) isolate the factors affecting consumer choice between fresh and frozen meat.
