Changing the acidity and mineral composition of milk by treatment with anion-exchange resins to increase its heat stability

Anion-exchange resins AN-20 and ASD-4 (in hydroxyl form) were used in laboratory experiments for the treatment of milk with the aim of increasing its stability during UHT processing. The treatment reduced acidity levels by 1-8 deg T and had no significant effect on the contents of milk fat, protein and lactose, whilst slightly reducing chloride and phosphate ions; the flavour of the milk was not affected.
