In the USSR, food-grade pepsin is used for milk coagulation in the manufacture of soft cheeses and Bryndza. To define the most satisfactory standard for food-grade pepsin, 18 variants were tested, using different proportions of pig and ox stomach mucosa, different methods of hydrolysis and different extraction temp.
