In tests of 79 varieties, amphidiploids surpassed wheat in protein content of grain: of 39 octoploids, one third contained more than 20% compared with 14.6% in Bezostaya 1 Hexaploids contained less protein than octoploids. The maximum protein content was observed in amphidiploids using the wild perennial ryes Secale montanum and S. kuprijanovi.
