Effect of feeding a protected safflower oil supplement on the composition and properties of the sarcoplasmic reticulum and on postmortem changes in bovine skeletal muscle

Effect of feeding a protected safflower oil supplement on the composition and properties of the sarcoplasmic reticulum and on postmortem changes in bovine skeletal muscle

Journal of Food Science 38(5): 821-823

Animals were 4 bullocks 9 to 10 months old and four 21 months old, weighing about 200 and 250 kg, respectively. To 2 of each group a diet of grass hay 60 and sorghum grain 40% was given and to the other 2 the same diet but with 22.5% protected safflower oil and casein. The bullocks were killed after 6 weeks on the diets and the sternomandibularis muscles were examined.
