Effect of gamma-irradiation on some bacteriological and chemical properties of buffalo milk

Irradiation at room temp. with doses of 0.5, 1 and 1.5 Mrad respectively caused reductions in total count of buffaloes' milk from 75.8 X 107/ml to 6965, 877 and 96/ml; coliforms (initially 23 000/ml) were completely destroyed, even by the lowest dose. Titratable acidity (0.156 initially) decreased to 0.145, 0.145 and 0.143%, but pH (6.7) was not affected by irradiation dose. Soluble N was not affected by 0.5 Mrad but was decreased slightly by the higher doses.
