Effect of nitrogen fertilization on the protein content and amino acid composition of wheat grain

In field trials in 1971-2, grain protein content increased from 10.88 and 10.95% in wheat Kalyan Sona and Heera with no N fertilizer, to 12.54 and 13.36% at 80 kg N and 14 and 16.25% at 160 kg N/ha. Glutamic acid, alanine, valine, leucine and phenylalanine increased and proline, glycine, tyrosine and lysine decreased in the protein with increased N. Compared with Kalyan Sona, Heera showed markedly greater increases in aspartic acid, valine, leucine, phenylalanine and histine, particularly at the highest N rate.
