For preparation of samples, 100 g fresh or evaporated milk, 50 g cream or 10 g dried skim-milk (reconstituted in 30 ml water) are adjusted to pH 4.5 with 3N H3PO4 and brought to total wt. of 150, 150, 150 and 50 g respectively with 1.36% KH2PO4 buffer, pH 4.5, and centrifuged at high speed for 10 min.
