Molochnaya Promyshlennost' (4): 23-24, 46



Difficulties of mechanizing production of Suluguni cheese (small rennet-type, pickled cheese having a concentric-layer structure imparted by special plasticizing treatment) are pointed out and a description is given of a mechanized, partially automated line developed at the Tbilisi Dairy Research Institute. The line consists essentially of a raised cheese vat, cheddaring vessel, unit for melting curd, moulding machine, cooler, and mobile brine tanks.
