Method for manufacturing a food product having a matured cheese flavour

A matured cheese flavour composition for natural cheese, processed cheese and processed cheese products is improved by adding more than or equal to 3 amino acids of the group glutamic acid, glycine, lysine and methionine (in which glycine may be partly or completely substituted by alanine and/or proline).
