Calorie reduced potato products contain besides puree of whole potatoes also more than or equal to 25% by wt. potato pulp (obtained as a residue after extraction of 75-100% of the starch), the ratio puree/pulp being 0.4 : 1 to 10 : 1. The wt. ratio of indigestible polysaccharides to extra-cellular starch in the potato pulp used is preferably >1:1.
