Method for producing a food product having a matured cheese flavour

Cheese products having a flavour of ripened cheese, e.g. Emmental or Cheddar, are obtained by adding a cheese flavour composition which, among the usual ingredients, contains a C3-5 synthetic alkylamine in sufficient quantity to produce a concn. of 0.1-80.0 mg/kg in the final product.
