Method for the manufacture of food products having a blue-veined cheese flavour



Netherlands Patent Application: (7 204 791)



Oct-1-en-3-ol, when used as an ingredient in blue-veined cheese flavour compositions, e.g. for processed cheese, cheese spread or cheese sauce, in an amount of preferably 5-50 mg/kg of the final product, masks the slightly chemical character of generally used flavouring compositions of this kind. A racemate of oct-1-en-3-ol is preferably used for economic reasons and without impairing the quality of the product.
