Method of imparting a cheese flavour to a food product

An Italico-cheese-type flavour is imparted to unripened cheese, e.g. 3 weeks old Cheddar, by adding preferably 0.3-10.0 mg 2-phenylethanol/kg. The cheese flavouring composition contains besides 2-phenylethanol preferably also pentan-2-ol (3-40 mg/kg cheese) and optionally other components.
