Physico-chemical properties of cowpeas, Vigna unguiculata L. (Walp.), influencing varietal differences in culinary values

Journal of the West African Science Association 17(1): 3-10

A total of 26 varieties, including local and exotic types, and having smooth, wrinkled or rough seed-coat textures, were studied. Highly significant differences occurred in seed-coat thickness, varieties with a rough seed coat having a thin testa, and those with a smooth or wrinkled coat having a thick testa. Varieties with rough testas absorbed water much faster than those with wrinkled or smooth testas.
