Seasonal variation in the tannin, sugar and protein contents of persimmon fruits

Five Diospyros kaki cvs and Goyom (D. lotus var. typica) were studied. Most tannin was found in the cvs Heuksi (9.2%) and Goyom (26.1%). July was the best month for tannin extraction with most cvs but with Goyom August was better. Cultivar sugar contents increased linearly as the season progressed.
