A large increase in peroxidase activity occurred in the pulp of Jonathan and Starking Delicious apples in CA storage; no increase was observed in other cvs in CA storage, or in any in refrigerated storage. However, peroxidase activities in the peel of all cvs increased in both CA and refrigerated storage. Gel-filtration patterns of the pulp and peel revealed 3 fractions (I, II and III), except in Mutsu which showed only II and III.
