Studies on precooling and storage of some varieties of snap beans

, : Studies on precooling and storage of some varieties of snap beans. Annali dell' Istituto Sperimentale per la Valorizzazione Tecnologica dei Prodotti Agricoli, Milano 4: 155-172

Beans of 17 cvs were pre-cooled in forced air or were hydrocooled. Some could not be stored for more than 1 or 2 days owing to chilling injury, toughness or wilting but others kept well for 7 days. Most were better pre-cooled in water than air. Some were especially susceptible to cold injury but more were better stored at 4 deg C than at 7 deg.
