Studies on the sugars, organic acids and volatile components of grape berries

Technical Bulletin of the Faculty of Horticulture, Chiba University (20): 51-60

The components of 18 vinifera and labrusca cvs were determined by GLC. Among the sugars, glucose and fructose were predominant in all cvs and the fructose level exceeded the glucose level in Chardonnay, Riesling, Aligote, Cabernet Sauvignon, Rose Ciotat and Kawakami No. 1 grapes. Sucrose, xylose and arabinose were detected in some cvs.
