Almond or other nut biscuits are made by cooling to -45 deg C a mixture containing fat, sugar, and chopped almonds, coconut flakes, nuts, fruit etc. all or some of the ingredients (e.g. fat powder, glucose powder, castor sugar or lecithin powder) having first been spray-, roller- or vacuum-dried to a moisture content less than or equal to 4%, and granulated to a particle size of less than or equal to 2 mm before mixing.
