The baking quality of the grain produced by four varieties grown in three successive years, at two sowing densities and with eight different schemes of nitrogen application, was evaluated. Protein content was highest in most combinations of conditions in Ostka Popularna Wet gluten content was 20% to 25% higher in all conditions in Ostka Popularna than in any other variety.
