A method is described in which the peroxidase and polyphenoloxidase activities of durum wheat grain were measured after polyacrylamide-gel electrophoresis in aluminium lactate or tris-HCl buffers. Significant correlation was found between the activities of peroxidase, but not polyphenoloxidase, measured by this method and by spectrophotometry (r = +0.952 and 0.975).
