13 carcass measurements and cold carcass weight of 50 Hereford steers were used in a multiple regression equation to estimate the weight of boneless, retail cuts. The best prediction equation was: Y = 0.739 X (carcass weight) + 10.30. Using this equation, the estimated yield of boneless cuts from a further 12 Hereford steers was highly significantly correlated with actual yields (0.96). The equation was suitable for estimating boneless, retail cuts in Hereford carcasses weighing 251-333 kg.
