A study of the grain quality of alternative wheats obtained by hybridization of winter and spring forms in Moldavia

The results of studies of 100 forms from the 1962 and 1968 harvests and 40 from the 1969 harvest indicated that ecological factors strongly affect certain technological properties in the grain of alternative wheats, but no great variation in gluten quality could be observed from year to year. Flour strength was correlated with the index of swelling of the flour in acetic acid.
