Chemical composition and physical properties of Simmental cows' milk in Azerbaidzhan

No significant differences were found in the acidity and sp. gr. of milk of local, Simmental and cross-bred cows. Milk from local cows contained more TS, including fat and protein, than the milk of Simmental cows; that of cross-bred cows was intermediate.
