Dried ingredients for recombined products

Winter school on spray drying: 46-51

With increasing diversity of marketing it will be necessary to vary production technology to suit the requirements of different recombining plants (in 1971-72 about 50% of Australia's total dried skim-milk exports of 50 000 t was used in recombining) and provide for changes in product specifications. This paper explains the reasons for certain specifications and outlines the research programme, carried out at the author's Institute, to understand and meet the changes required.
