Effect of injury and relative humidity during curing on weight and volume loss of sweet potatoes during curing and storage

Tubers of sweet potato Centennial were cured at 80, 90, 97 or 100% r.h. Weight and volume loss were reduced at 80-90% and 90-97% r.h. even with skin injury. At 80% r.h. moisture was lost from skin injury, but at 100% r.h. sprouting was encouraged.
