Effect of weight of young cattle on yield and quality of meat

Effect of weight of young cattle on yield and quality of meat

Vestnik Sel' skokhozyaistvennoi Nauki (1): 45-49

A total of 331 bulls and bullocks of dairy and dual-purpose breeds adequately fattened were killed at bodyweights 300 to 350, 350 to 400, 400 to 450 or 450 to 500 kg. Results of carcass analyses are given in 6 Tables. With increase in liveweight the meat content of the carcass and of the forequarters in particular increased. Meat in carcass was best at 400 kg liveweight for the bullocks but at higher liveweight for the bulls.
