Experiments investigating the degree of hydrolysis of whey proteins (precipitated by heating, acidification, acidification/alkalization, and addition of CaCl2) in culture media of Uglich starter containing 3 strains of Streptococcus lactis, 2 of Str. cremoris, and 1 of Str. paracitrovorus and Str. diacetilactis and of single-strain starters were carried out.
