Effects of breed, sex, age, feeding method and muscle on myofiber characteristics and meat palatability

Effects of breed, sex, age, feeding method and muscle on myofiber characteristics and meat palatability

Dissertation Abstracts International, B 38(2): 426

Histological traits (fibre type numbers, diameters and populations) were measured on the following: 72 lambs that differed in slaughter weight (41 v 50 kg), sex (wethers v rams) and feeding method (pasture, pasture plus grain and grain in feedlot); 96 cattle that differed in sex (steers v heifers), breed (Aberdeen-Angus, 3/4-Angus, 1/2-Angus) and feeding method (grain in feedlot v grain on pasture); 96 cattle differing in breed (Angus v Simmental-cross steers) and feeding method.
