Extraction rates and chemical composition of seed types in egusi (Colocynthis citrullus L. )

Egusi seeds were classified on the basis of thickness of the seed coat and the edge, texture of the seed coat and seed size. 5 seed types were studied for the proportion of the shell by vol. and wt. to the kernel (extraction rate). Kernels of the different seed types were analysed for fats and oils, total-N, soluble sugars, starch, P, K, Ca and Mg, on DM basis.
