Factors influencing the accuracy of the electrophoretic method for detecting cows' milk in goats' milk and cheese

The method described previously is based on the assumption that the proportion of alpha s-casein is constant in cows' milk (CM). In 86 individual samples of CM and 84 of goats' milk (GM), casein contained 40.0 and 21.2% alpha s-casein with SD of 5.3 and 5.9% respectively.
