For determination of the diastase number of honey, the time necessary for hydrolysis of 5 ml of 0.25% starch solution by the diastase contained in 15 ml of a 10% solution of honey was estimated. When the diastase number was more than or equal to 17.9-13.9 (natural honey), or > 3.3 (adulterated honey), the reaction time was 2-3 min or 15 min, respectively. This method was very much quicker, and used much less starch than the usual one. (Chem. Abstr. 79: 103695r (1973).)F.B.
