The immobilized beta -galactosidase described in the preceding abstract was used to prepare lactose-free milk. 200 ml skim-milk were incubated at 40 deg C with 236 units immobilized enzyme in a flask rotating at 60 rev/min. Complete hydrolysis of the lactose was obtained in 40 h. Experimental batches of lactose-free milk were concentrated to 37.35% TS without crystallization occurring.
