The article deals with the Central dairy in Berlin, which now processes about 380 000 l. milk/day; milk supplies are obtained from the German Federal Republic (about 98 million l./yr), German Democratic Republic (12 million l.), and Berlin's own dairy farms (0.3 million l.). The range of products includes pasteurized and UHT milk, whipping cream, 32 types of yoghurt, 10 variants of pudding and cream desserts, 13 items of kefir, buttermilk and soured milk, and 24 types of quarg.
