The possibility of manufacturing Bryndza cheese using skim milk was investigated, with the following cheese milk combinations for 1 kg cheese: (i) 4.63 kg milk (1.9 kg whole and 2.73 kg ewes' skim milk), and (ii) 6.16 kg milk (2.83 kg whole ewes' milk and 3.33 kg cows' skim milk) in comparison to (iii) control Bryndza made from whole ewes' milk (3.64 kg).
