Well-ripened Tilsit cheese alone or 'piquant' Tilsit cheese mixed at 70% with Gouda, Edam or Warmin'ski cheese are used for 'Warmezan' manufacture. For this purpose, the cheeses may be mechanically damaged, or with non-standard moisture content, or colour.
