The possibility of manufacturing normal Camembert cheese from ultrafiltration concentrates without whey removal was investigated in 74 experiments. Ultrafiltration was carried out in a plate-frame plant using cellulose acetate membranes and temp. of 17-27 deg C. Removal of 77-81% filtrate (in relation to the skim-milk quantity used) was optimum, giving cheese with 65-68% moisture in the fat-free portion and 45% fat in DM.
