Meat production in Turkey increased from 528,000 tons in 1970 to 640,000 tons in 1974 and an estimated 685,000 tons in 1975. The pattern of meat consumption has also been changing with beef gaining relative to sheep meat consumption. In 1974 the government introduced a floor price for slaughter livestock. The Meat and Fish Organization (E.B.K.) buys animals, based on this guaranteed price system, but they cannot buy all fattened animals because of insufficient capacity.
