It is considered that membrane processing has a good future because it saves energy and reduces product losses and thus minimizes the negative effect of dairying on environment. The application of ultrafiltration to the manufacture of such products as quarg, Camembert cheese, ymer, yoghurt and protein-enriched milk, based on experience in Europe, is outlined and brief data are given on the studies in the USA on Cottage cheese production using ultrafiltration.
