The pour-plate method is specified for examination of dairy products for proteolytic organisms, using plate count agar with 10% sterile reconstituted antibiotic-free skim-milk added immediately before pouring, incubation at 25 plus or minus 1 deg C for 48 plus or minus 2 h, and counting colonies after flooding plates for 60 s with 1% HCl or 10% acetic acid.
