13 samples of ice cream sold in Kafr-El-Sheikh were analysed for chemical composition and microbiological quality. Total counts varied from 6.5 X 105 to 5.3 X 108/ml. Coliforms were not detected in 4 samples; in the other 9 samples they ranged from 3.1 X 102 to 4.8 X 103/ml.
