The application of dip slides, normally used by medical bacteriologists, as a rapid method of assessing approx. microbiological quality of many foods and food processing operations, was investigated. In an oyster processing plant a rapid build-up of contamination in the wash water was shown within 15 min of the start of processing. Nutrient agar-McConkey agar combination is suited to water examinations and viable counts at 37 deg C and coliforms may be enumerated simultaneously.
