The potentiometric method was devised to determine sodium carbonate addition in milk; the method involves measuring the pH and pNa with pH-meter and glass electrodes. The pNa of milk is shown to be constant (1.7 plus or minus 0.04) and to be sensitive to sodium carbonate additions. The variation of milk pH during storage does not essentially affect the pNa.
