This invention relates to a process for the production of processed cheese containing fruit, in particular walnuts. In a preferred embodiment, the walnuts, prior to incorporation into the cheese are subjected to repeated soaking in demineralized water at 22 deg C for progressively shorter periods of time with washing with demineralized water after each soaking stage, and finally to drying at 105 deg C for 2 h to inactivate the enzymes.
