Proteolytic activity, estimated by the release of non-protein N on incubation at 37 deg C, was demonstrated in casein from raw milk and friction-sterilized (FS) milks heated at 130, 140, 150 or 160 deg C. Protease activity varied from one batch of milk to another, and decreased with increasing heat treatment; only slight activity was found in UHT milk and none in autoclaved-sterilized milk.
