Protein quality in the grain of high-protein and low-protein forms of maize

Compared with the normal variety Odessa 10, the four high-protein forms studied contained less histidine and arginine, but more threonine, glycine, alanine, valine, isoleucine and tyrosine, in the water-soluble and salt-soluble proteins. The high-protein forms also contained less lysine, histidine, arginine, proline, glycine and tyrosine, but more alanine, leucine and phenylalanine, in the residual proteins.
