In 5 trials in 1974-5, peas were cut at 0400 h and were combine-harvested at 3-h intervals between 0430 and 1930 h. Total and alcohol-insoluble DM, mealiness, tenderometer value and size of peas increased with increase in time between cutting and combine harvesting, but sucrose content and values for sweetness and pea aroma decreased.
