In an experimental study of methods for continuous determination of the protein content (in DM) of ultrafiltered whey concentrate, a Sigrist (Polymetron) turbidimeter gave disappointing results, as variations in turbidity and protein were not proportional (inversion of the curve at 8-15 g/l., depending on the wavelength of the incident light). Refractometry results were affected by lactose and minerals, although there was a good correlation between refractive index and SNF content.
