The moisture content of nectar (55-75%) was reduced to about 20% in the honey formed from it. Sucrose in the nectar was hydrolysed to glucose and fructose. A trisaccharide, possibly erlose, was formed by transglucosidation during the action of invertase secreted by the honeybee. The pH of nectar, 5.0-5.8, decreased to that of honey, 3.7: this may be due to gluconic acid production by glucose oxidase from the honeybee.
